Velveeta Sausage Dip

This is one of my uncle's infamous dips!! He makes this for most, if not all, of our family occasions and it is a fan favorite, scrap the bowl, dont leave a crumb behind kind of favorite! It is so simple to make but I must warn you, IT IS NOT FIGURE FRIENDLY, again NOT figure friendly! Not sure what might have tipped you off,  I'd have to go with the 16 ounces of velveeta!! But hey we can all treat ourselves once in a while, right?!

Recipe:
16 oz velveeta (it comes in a huge block), cut in to cubes
1 lb of sausage browned and grease drained (hey--im trying to help a little with the fat content :))
1 can rotel diced tomatoes and green chiles

Throw all this in the crock and let simmer until cheese is nice and gooey and all ingredients are fully incorporated (1-2 hours on low).  Serve with fritos or tostitos!  GREAT for the super bowl right around the co-ner!
Enjoy

XOXO
